Hitsuji SUNRISE is a specialty restaurant opened by the owner, Haruto Sekizawa, in order to spread the word about the wonderfulness of lamb and lamb dishes, which he has become fascinated by.

It is said that domestically produced lamb distributed in Japan accounts for less than 1% of the total, which means that it is very rare for Japanese people to have the experience of eating truly fresh lamb.

At Hitsuji SUNRISE, we purchase a variety of whole sheep, including lamb (under 12 months old), mutton (over 1 year old), and hogget (1-2 years old), and provide every part of them fresh and cooked in the most suitable way.

From Genghis Khan to raw dishes and final dishes, it's like an "adventure with sheep" savored at the table.
