After graduating from culinary school, Mr. Taichi Sato, the owner of Ichita, studied at the Chinese department of a luxury hotel, and then went to New Zealand to study a language for a year in order to see the wider world. Wanting to broaden his knowledge overseas and once again convey the goodness of Japan to a wider audience, he devoted himself to Japanese cuisine. After training at a Japanese restaurant in his hometown of Hokkaido, he moved to Tokyo and worked at a famous restaurant in Shinjuku Gyoen. Appreciating the rich blessings of Japan, he fell in love with cooking, and later became head chef at the young age of 29, becoming the head of the kitchen. In September 2014, he became independent.
