After graduating from university, I got a job at a department store. After a while, he learned the basics of tonkatsu for about 11 years at Enraku, a pork cutlet restaurant in Shimbashi run by his uncle.
After working at a tonkatsu chain store, a kushiage (deep-fried skewers) restaurant, and a Japanese-style restaurant, he trained himself in the differences in breadcrumbs depending on the ingredients and how to serve customers at the counter. In the difficult period immediately after independence, he continues to pursue and research what he thinks is "delicious" while making use of his past experiences. Through trial and error and many twists and turns, he established a style of deep-frying at a low temperature. Creates "white tonkatsu," which is said to have "changed the concept of tonkatsu."
