Hitsuji SUNRISE is a specialty restaurant opened by the owner, Haruto Sekizawa, in order to spread the word about the wonderfulness of lamb and lamb dishes, which he has become fascinated by.
His passion was even covered on TV Tokyo's "We've Found a New Extraordinary Person" last year!
While working at a company, Sekizawa became fascinated with the wonderful lamb dish Jingisukan, and after turning 30, he made a bold decision. He began his career in the food and beverage industry by training at the popular Sapporo restaurant "Sapporo Genghis Khan Shirokuma." After he became the manager of the restaurant's Shinbashi branch, his greedy desire for lamb led to record sales!
Even after he retired, his passion did not fade, and he visited many ranches in Hokkaido and Australia. In particular, in Japan, he visited sheep ranches all over the country, driving 3,000 km overnight in his own car. He used the vast amount of information he gained about the history of lamb, its cooking methods, and the relationships he had with ranchers to open his own restaurant, "Hitsuji SUNRISE," in 2016.
At Hitsuji SUNRISE, we purchase whole sheep, including lamb (under 12 months old), mutton (over 1 year old), and hogget (1-2 years old), and serve every part of the sheep fresh and cooked in the most optimal way. From Genghis Khan to raw and final dishes, it's like an "adventure with sheep" at your table.
We will be releasing our March seating schedule soon. All seats are available from Saturday evening onwards. We are still accepting reservations for February seats.
